The bottom is usually made of aluminum or stainless steel and the pan is covered with a ceramic coating. Before there were different types of ceramic pans, ceramic frying pans were THE ceramic pans. Even today, most people understand the ceramic pan to be the most well-known frying pan.

What is a ceramic grill pan and what are its advantages and disadvantages?

Any type of material can be used with ceramic-coated pans. Among other things, the function of the material is to direct the energy (heat) into the ingredients. Aluminum and stainless steel are the most common and widespread materials for ceramic pans.
Pure aluminum pans are rarely available today. They are usually ceramic-coated or have a PTFE coating. Aluminum pans are cheap, light in weight and best conduct heat.
The special thing about stainless steel is that it cannot rust. Stainless steel is hard and easy to care for. It is steel, to which nickel and chrome have been added. In addition, aluminum or copper plates are often used inside a stainless steel pan to improve heat conduction.
Poor thermal conductivity means that the pan takes longer to react to changes in temperature and to reach the cooking temperature.
When choosing the diameter of your pan, you should pay attention to two points:
- The diameter, i.e. the width of the pan base, should have the same or a similar diameter as the part of the stove surface on which the pan is to be used. This is particularly important for electric and induction hobs, as the pan base is the part that is in direct contact with the heat source.

Basically, the size of your pan depends on what is cooked and for whom. The diameter of the pan base and the height of the pan together form the volume, i.e. the capacity, of the pan. Depending on the purpose and number of people, you should choose a high or low margin.
Ceramic frying pans with high edges, such as wok pans or stew pans, give you the option of cooking with liquids or preparing sauces without you spilling anything from the pan. Ceramic pans with a low rim are recommended for preparing dishes that land on the plate immediately and are not liquid after preparation, such as pancakes or steaks.
The weight of your ceramic pan shouldn’t be too heavy or too light. If your pan is light, it’s a sign of thin material. If your pan is thin, it tends to deform more quickly. Most often this happens with very cheap pans.
If your pan is too heavy, cooking with it will be more difficult than you thought. If you want to pour something out of the pan, this can quickly become an arm workout. Also keep in mind: the further back you put the pan handle, the heavier the pan seems.

After a while, the white coating can cause discolouration from the food. Therefore, pay attention to the correct cleaning and care of your pan. With dark coatings, you have the advantage that scratches are not noticed immediately.
Again, be careful not to use non-metallic objects in the pan so that there are no scratches at all. Whether your pan is coated light or dark has no effect on the function of the non-stick coating.

Suitable for Induction
In order for your pan to work on an induction cooker, the bottom of your pan must be ferromagnetic. The ferromagnetism property is generated by external magnetic fields, making the material magnetic. This creates an attractive force between the external magnetic field and the ferromagnetic material.
Pay attention to the manufacturer’s information. Induction cookers work roughly as follows: If the pan reaches the ferromagnetic field of the induction cooker, it is not the hob itself that is heated, but the cookware.
Here, energy is converted into heat by transferring the energy to the bottom of the ceramic pan as an alternating electromagnetic field. Under the cooking surface is the coil with current. The magnetic field creates eddy currents that heat the pan.

Thanks to the non-stick coating, the food does not burn when seared. Should you still not want to do without oil, please make sure that you use oils with a high smoke point. Oils with a low smoke point, such as olive oil, are unsuitable for (hot) searing.
It is best to add the oil to the pan shortly before adding the food after the pan has been heated for about 3 minutes. Warning: Acrolein is toxic and carcinogenic and is created when fats overheat. It is also irritating to the mucous membranes.
Lid and pouring rim
A pouring rim allows you to pour without dripping. A pouring rim is particularly advantageous for braised and wok pans, because here you can pour sauces or soups, i.e. liquids in general, without dripping. The liquids therefore flow controllably to where they are required.
A lid is also an important aspect to watch out for. Not all pans include a lid on delivery. But a lid has more than just one function: it decides on the nutrient content in the food, the cooking time and the energy consumption.

Yes. Ceramic pans contribute to health. Nothing stands in the way of a healthy, low-fat and tasty meal. The ceramic seal allows you to prepare fried eggs or fried potatoes without fat and oil.
How do I clean a (burned) ceramic pan?
For cleaning, you should only use clear water and a sponge. It would be ideal to wipe alone with a kitchen towel. Burnt food can be left overnight with warm detergent water and cleaned in the morning with a soft sponge.
Cleaning with steel wool and rough cleaning objects is prohibited. These destroy the non-stick effect. Dishwashers are not suitable for the ceramic pan because the aggressive cleaning agents attack the ceramic coating.
Which fat / oil do I have to use with a ceramic pan?
When cooking in a ceramic pan, use oil with a high smoke point, such as refined oil. You should avoid virgin olive oil or oil with a low smoke point when frying. Margarine is very suitable for flour, potato and ice cream dishes.
